For my first real post, I thought I’d start with, what I know to be, a home run. Double Chocolate Oatmeal Cookies. Before you stop and say, BOOOOOORING, just wait….
These are not ordinary chocolate chip oatmeal cookies. There are a few quirks to this recipe that truly make the final product unique and delicious. If you bring these cookies to work, you may catch your co-workers whispering about you, and not in the “office hussy” sort of way. True story, that really happened.
These cookies start off in the same way any respectable cookie starts off:
Butter. Two full sticks.
Cream the butter with a cup of brown sugar until thoroughly mixed. Then add the eggs and vanilla. You will end up with something that looks like this:
Next, and this is very important, GRIND the oatmeal in your food processor for a few seconds until it has the texture of course meal. DO NOT SKIP THIS STEP. This is part of what gives this cookie a certain, je ne sais quoi.
In a separate bowl, add to the oatmeal the flour, baking soda, and salt and combine until mixed. Gradually add this into the butter/sugar mixture and stir.
Now comes my favorite part – the chocolate. Add 16 oz of semi-sweet chocolate chips to your batter and combine.
But wait, that’s not all. For the factor that really makes this cookie amazing, add one 4 oz Chocolate Bar, chopped.
Oooooooooh.
Aaaaaaah.
Make sure when chopping the chocolate not to make the pieces too tiny. There’s something to be said for biting into a cookie and getting a hunk of chocolate in return.
It’s not necessary to use dark chocolate, or even Ghiradelli, that’s just what I prefer. Any 4oz chocolate bar will do.
Once you’ve added the chopped chocolate, form golf ball sized mounds of dough and place on your cookie sheet.
These cookies do not require that much cooking time, only 7 to 9 minutes. When they come out, they will look slightly undercooked. RESIST the temptation to put them back in the oven. I promise they will be OK. Let them cook on the tray a few minutes longer and then move to wire rack to cool completely. Finished product should resemble this:

- ½ tsp. Salt
- 1 tsp. Baking powder
- 1 tsp. Baking soda
- 1 4-ounce chocolate bar, chopped
- 16 ounces semi-sweet chocolate chips
